Baked Oatmeal Cups

This is a great option for those that need a quick breakfast that is filling.  These muffins can be made in advance and they store very well in the freezer.  I always have a bag of them available in the freezer so I can warm it up in the morning and go!  It is nourishing like a warm bowl of oatmeal topped with fresh fruit and warming spices but it eats like a muffin.  Best of both worlds!

Gluten Free                Dairy Free                    Makes 12 muffins                   Bake: 30 minutes                       Total time: 45 minutes
 
Ingredients: 
2 TBSP melted coconut oil
1 egg, whisked
1/2 tsp vanilla
1 cup applesauce, unsweetened
1 banana, ripe, mashed
1 cup chopped apple
1/4 cup honey
1 1/3 cup coconut milk
2 1/2 cups old fashioned oats
1/8 cup ground flax seed
1/2 TBSP. cinnamon
2 TBSP oat flour
1/2 tsp. sea salt
Topping: Raisins or Chocolate Chips
Instructions:
Preheat oven to 350 degrees.  Prepare muffin tin with paper baking cups or grease well with coconut oil.  Combine all wet ingredients in a large mixing bowl.  Oil, egg, vanilla, applesauce, banana, apple, honey and milk.  Stir well.  In a smaller bowl, combine all dry ingredients.  Oats, flax seed, cinnamon, oat flour and sea salt.  Mix well.  Add dry ingredients to the wet ingredients and combine well.  Divide evenly into 12 muffin tins and top with raisins or chocolate chips.  Bake for 30 minutes or until a toothpick comes out clean.
