Chocolate Protein Balls
Can you think of a better combination than peanut butter and chocolate? I didn't think so. They were wonderful to start with but then I added coconut and it took it to the next level. These little gems are full of protein, fiber, and healthy fats to power you through your morning or to hold you over till dinner. This recipe is very forgiving so you can tweak it to your liking by adding or reducing some of the ingredients.
Gluten Free Dairy Free
1 cup gluten-free oats
3/4 cup unsweetened peanut butter (may use almond butter)
2/3 cup unsweetened coconut, lightly toasted
1/2 cup ground flax seed
1/4 cup sliced almonds
1 tsp vanilla
1/3 cup honey
1/2 cup dairy free chocolate chips (I use Enjoy Life)
2 TBSP chocolate protein powder (optional)
1/2 cup unsweetened coconut, for rolling balls in (optional)
(If using the optional chocolate protein powder you might want to consider
reducing the amount of chocolate chips used)
In a large mixing bowl combine oats, toasted coconut, flax seed, protein powder (optional), and almonds. Mix well. In another bowl combine peanut butter, vanilla, and honey. Mix well and add to the oat mixture, stirring to combine. Add the chocolate chips and stir gently. Shape into small ball and roll in coconut if desired. These may be kept at room temp for the first day. They most likely won't be around for long but if so you can store in the fridge for up to a week. Makes approx. 32 small balls. Enjoy!
