Arugula Orange Beet Salad

Gluten Free                             Dairy Free                                   Soy Free                                   Serves: 2 large side salads


4 cups arugula leaves

1/2 orange, sliced, cut in half

1 beet, sliced 1/2 inch thick 

Avocado oil

Goat cheese

Almond slices


Orange Citrus Dressing 


Wash and peel beet.  Slice into 1/2" slices.  Toss with Avocado oil and place on a parchment paper lined sheet pan.  Roast at 350 degrees for 30 minutes or until the beets are fork tender.  Set aside to cool.  

Place 2 cups of arugula on each plate.  Top with blood oranges and cooled roasted beets.  Sprinkle with desired amount of goat cheese and sliced almonds.  

Dress with Orange Citrus Dressing.
