Brussel Sprouts with Bacon
These Brussel Sprouts are wonderfully delicious. The combination of the bacon, garlic, shallot, and Dijon mustard combine beautifully to make this a savory side dish. It is easy to prepare and takes less time than roasting the sprouts. Brussel Sprouts are very nutritious and an excellent source of Vitamin C and K. They are also full of fiber and phytonutrients that have been shown to be cancer protective. Enjoy!
Ingredients:
1 pound Brussel Sprouts, rinsed, trimmed and halved
4 slices bacon, uncured, chopped
1/2 cup shallot, sliced thin
5 cloves garlic, minced
1 cup chicken broth
1 TBSP Dijon mustard
Sea Salt, to taste
Ground black pepper, to taste
Directions:
Prepare ingredients by rinsing the Brussel Sprouts and trimming off the stem. Cut each sprout in half. Chop bacon, slice shallot, and mince the garlic.
Cook the chopped bacon in a stainless steel skillet over medium heat until bacon is almost done. It will continue cooking with the sprouts so don't over cook it at the beginning. Remove bacon from the skillet and pour the bacon grease into a glass container. Measure out 1 TBSP of bacon grease and return it to the skillet.
Heat the skillet on med-high heat and add the sprouts, preferably cut side down, and the shallot. Saute until sprouts begin to brown slightly, approximately 5 minutes. Add garlic and bacon to the skillet, stir well and saute 3 minutes.
Add chicken broth, bring to a light boil, and continue to simmer until sprouts are fork tender.
Remove from heat and stir in Dijon mustard. Add salt and pepper to taste.
