Sauteed Spinach

Did you know that dark leafy greens are the healthiest food that a person can eat?  It's important to be getting a large quantity of these greens on a daily basis.  I love salads and eat them often but some days I just want to switch it up a bit.  This recipe is quick to prepare and works great for any meal of the day.  Yes, even breakfast.  I pair it with 2 pastured eggs and it allows me to get my day started in a healthy manner and holds me over until lunch.   

Prep Time: 5 minutes          Cook Time: 8 Minutes            Serves: 2

Ingredients:

1 tsp. Extra virgin olive oil

1/4 cup yellow onion, diced

1 large garlic clove, minced

5 cups organic spinach

Cherry tomatoes, approx. 10 - 12

Sea salt, to taste

Ground black pepper, to taste

Instructions:

In a stainless steel skillet put the olive oil in and saute over medium low heat until soft and translucent. Add minced garlic and saute for 1 minute.  Add all the spinach and stir well to coat with olive oil, onion and garlic.  Place lid on skillet and let steam over low heat for 3 minutes.  Add in the cherry tomatoes and cover again until warm.  Season with sea salt and pepper.  Serve immediately.  Enjoy!
