Zucchini Noodle Salad

This colorful salad is packed with nutrition and is very quick to toss together.  Perfect size for two people when paired with a protein source.  I have it often with a grilled salmon filet or chicken breast.  It also keeps well in the refrigerator so you can make it in advance if you want.  Be creative with this recipe and try your own combo of favorite vegetables.  Swapping out the fruit or the greens can give it a new twist.  It is very tasty with fresh mango and kale.  This salad pairs well with a dressing that is slightly sweeter such as a balsamic vinaigrette.  Yum!!

Gluten Free    Dairy Free       Serves 2

1 Medium sized organic zucchini, spiralized

1/4 cup packed organic spinach

1/4 cup organic cherry tomatoes, sliced in half

1 TBSP pumpkin seeds

1/2 cup shredded red cabbage

1/4 cup walnuts

1/4 cup organic cilantro, chopped

1/2 cup organic red apple

1/2 cup organic red bell pepper

1 large green onion, diced

 

Toss all ingredients together in a large bowl.  

Top with your favorite dressing (I like it dressed with the balsamic dressing recipe on this site).   Enjoy!
